Homemade Diced Chicken with Cashew Nuts

 

We like to cook Chinese food when we want something very quick and easy. This is one of the recipes: easy and delicious homemade chicken with cashews.

Diced Chicken with Cashew Nuts (Serving: for 2)

300g (10 2/3 oz) chicken meat
100g (3 1/2 oz) fried cashew nuts
100g (3 1/2 oz) green pepper

Mixture A:
1 Tbsp. water

1/2 Tbsp. each soy sauce, corn starch
Mixture B:
5 sections green onion

6 slices ginger
Mixture C:
1 Tbsp. each water, soy sauce

1/2 Tbsp. each cooking wine, corn starch
1 tsp. sesame oil
1/8 tsp. pepper

1. Cut chicken into 1.5 x 1.5cm dices, marinate with A for 30 minutes. Discard the seeds and dice green pepper.
2. Heat the wok, add 2 cups of oil; heat to 248F (120C). Soak chicken in hot oil and lift out to drain. Keep 1 Tbsp. oil in the wok, stir fry B until fragrant, then add in green pepper to fry. Finally add in chicken and C to stir fry and mix well. Add in cashew nuts before serving.
