Carrot Bread with Orange Glaze

 
One day, I bought lots of carrots and I wanted to make carrot bread. I found this low fat recipe online.
I can't remember since I made this about a month ago, but I think I used flax seed instead of the whole egg.
Also the original recipe says 8x5 inch pan, but mine didn't have enough portion of the dough for 8x5. I also cut down sugar a lot so it's not so sweet. But I'll suggest to use 1/2 cup just like the original recipe says.

Carrot Bread with Orange Glaze   Makes 1 mini loaf

Olive oil cooking spray
1 1/2 cups flour
1 1/2 cups carrots, shredded
1/4 cup dried currants or raisins
1/4 cup sugar (original recipe use 1/2 cup)
2 tsp cinnamon
1/2 tsp nutmeg
1 1/2 tsp baking soda
1/4 tsp salt
1 whole egg
1 egg white
1 Tbsp olive oil (original recipe use 2 Tbsp)

Orange Glaze 
2 Tbsp orange juice
2 Tbsp honey
1/2 tsp vanilla extract

1.Preheat oven to 350°F. Lightly spray an 5 x 3-inch loaf pan with cooking spray.
2.In a large mixing bowl, combine flour, carrots, currants, Sucanat, cinnamon, nutmeg, baking soda and salt; mix well.
3.Make a well in the center and add whole egg, egg white, oil and 3/4 cup water. Stir until flour is completely incorporated and batter is moistened.
4.Pour batter into prepared loaf pan and bake 45 to 50 minutes or until a toothpick inserted in the center comes out clean. Cool completely on a rack.
5.Meanwhile, in a small bowl, combine juice, honey and vanilla for the glaze. Pour over top of carrot bread and serve.

Suncoast Hotel and Casino Hosts Gourmet Food Truck Block Party - June 9, 2012

 
Suncoast Hotel and Casino, partnering with Cluster Truck Events, will become the epicenter of rolling culinary greatness on Saturday, June 9, as it hosts the Gourmet Food Truck Block Party.

The Gourmet Food Truck Block Party brings together more than 25 food trucks from Las Vegas, Los Angeles, San Diego and Orange County, including: Snow Ono, Sin City Wings, Sausagefest, Chitown Hustler, Slap Yo Mama, Chef Ludovic Lefebvre’s LudoTruck, along with trucks featured on Food Network’s “The Great Food Truck Race.” (Participating truck line up is subject to change.)

A $5 per person admission fee will be charged, with 100 percent of proceeds benefitting Special Olympics Nevada.

Everyone loves donuts. I love donuts. Every time I see donuts shops, I just go in. I got maple bacon donuts and blueberry donuts, the total was $2.30 and I'm thinking to going back again to try some other donuts. Yeah.. did I say I'm going back? Yup, they were good. Pho Saigon - Koreatown

There are so many pho places in this area. But I never go eat Pho and I guess that's because I've only had Pho once in my life and it had no taste. Since then, I just didn't eat pho. But my friend said they are going to eat Pho so I followed them after clubbing. This place is open until 4am. The food is light so it's good place to eat late night.

Since this is the PHO place, I was gonna get pho but after looking at the menu, I decided to get vermicelli dish.

I actually loved it. When I ate all together, it was very tasty. I was gonna take home half, but I think I ate them all.

Scoops ice cream - Los Angeles

Yummy ice cream with reasonable price, and unique flavors. I've been here twice, but usually they do have different flavors. I wanted to try Thai tea ice cream but they didn't have it when I was there.
Parking is street and it's difficult to find the spot.

Lobsta, White Rabbit, and Temaki food truck

Food trucks at DTLA artwalk, back in 2011. I'm not sure if prices and menus are still the same or not.


Lobsta Roll $12 from Lobstatruck.

Yes, it's lobster. But also this is food truck. To me, $12 for a roll is way too much even that's lobster. It's good but not for $12.
